  • 1 cup all-purpose flour (divided)
  • 2 large eggs
  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup vegetable oil (for frying)
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour (for gravy)
  • 2 cups low-sodium beef broth
  • 1 cup whole milk

Instructions

  1. Tenderize the beef round steak to about 1/4 inch thick.
  2. Set up a coating station with three shallow dishes: one for seasoned flour, one for beaten eggs mixed with buttermilk, and one for extra flour.
  3. Dredge each steak in seasoned flour, dip in the egg mixture, and coat again in flour.
  4. Heat oil in a skillet over medium-high heat. Fry steaks until golden brown on both sides (3-4 minutes each).
  5. For the gravy, drain excess oil from the skillet, leaving about two tablespoons. Whisk in butter and flour until bubbling. Gradually add beef broth and milk while stirring until thickened (about 5 minutes).
