  • 8 corn tortillas
  • 1 cup enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)

  • 1 bell pepper, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground meat until fully cooked. Add chopped onions and bell peppers; sauté until soft (about 5 minutes).
