  • 34 boneless, skinless chicken breasts
  • 1 lb fresh tomatillos
  • 1 medium yellow onion
  • 4 large garlic cloves
  • ½ cup fresh cilantro
  • 1 cup queso fresco or Cotija cheese
  • 8 large flour tortillas
  • ½ cup crema mexicana or sour cream
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, sauté chopped onion in olive oil until translucent.
  3. Add quartered tomatillos and minced garlic; cook until softened (5-7 minutes).
  4. Blend the mixture with cilantro, salt, and pepper until smooth.
  5. Shred cooked chicken and mix with queso fresco.
  6. Fill each tortilla with chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
  7. Pour tomatillo sauce over enchiladas and sprinkle more cheese on top.
  8. Bake for 20–25 minutes until bubbly and golden.
