  • 1 cup dried chickpeas (soaked overnight)
  • 1 cup flat-leaf parsley (fresh)
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 2 tsp ground cumin
  • 1 tsp baking powder
  • 1 tsp salt
  • Pita bread (for serving)
  • Tahini sauce (for drizzling)

Instructions

  1. Soak dried chickpeas in water overnight. Drain before use.
  2. In a food processor, combine soaked chickpeas, parsley, garlic, onion, cumin, baking powder, and salt. Pulse until finely chopped but slightly chunky.
  3. Transfer the mixture to a bowl and refrigerate for 30 minutes.
  4. With wet hands, shape the mixture into small balls or patties.
  5. Fry in oil over medium heat until golden brown (about 4-5 minutes per side) or bake at 375°F for 25 minutes on parchment paper.
  6. Serve immediately in pita with fresh veggies and tahini sauce.
