  • 1 cup brown sugar (packed)
  • ¾ cup unsulfured molasses
  • 2 large eggs
  • ½ cup vegetable oil
  • ¾ cup whole milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
  3. In another bowl, mix brown sugar and molasses until smooth. Add eggs one at a time, then stir in oil and milk.
  4. Gradually combine wet and dry ingredients until just mixed; fold in vanilla.
  5. Pour batter into the greased loaf pan and bake for 50–60 minutes or until a toothpick comes out clean.
  6. Allow to cool for 10 minutes before transferring to a wire rack.
