  • 1 cup short-grain rice
  • 1 lb ground beef or lamb
  • 1 medium onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika

Instructions

  1. Rinse jarred grape leaves under cold water or blanch fresh leaves in boiling water for 2 minutes until tender.
  2. In a large bowl, mix rice, meat, onion, herbs, lemon juice, salt, pepper, and paprika until evenly combined.
  3. Lay a grape leaf flat with the stem end facing you. Place about 1 tablespoon of filling near the base; fold in sides and roll tightly.
  4. Arrange rolled grape leaves seam-side down in a pot; cover with water or broth and place a heavy plate on top.
  5. Simmer covered on low heat for 45-60 minutes until rice is cooked through and flavors meld together.
