  • 1/2 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1/4 cup coconut oil (melted)
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together whole wheat flour, rolled oats, baking powder, and salt.
  3. In another bowl, combine Greek yogurt, eggs, honey or maple syrup, melted coconut oil, and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; do not overmix.
  5. Carefully fold in fresh blueberries.
  6. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  7. Bake for 18–20 minutes or until golden brown and a toothpick comes out clean.
  8. Allow cooling for five minutes before transferring to wire racks.
