  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cooking spray or liners.
  2. In a large bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix canned pumpkin puree, honey (or maple syrup), eggs, and vanilla extract until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. If desired, fold in chopped nuts or chocolate chips for added flavor and texture.
  6. Spoon the batter into muffin tins, filling each about two-thirds full. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
