  • 4 bone-in chicken thighs (skin-on)
  • 4 cloves fresh garlic (minced)
  • 1/3 cup high-quality honey
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • 2 green onions (chopped) for garnish
  • 1 tbsp balsamic vinegar
  • 1 tsp grated fresh ginger (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a bowl, whisk together honey, soy sauce, minced garlic, and balsamic vinegar to create the marinade.
  3. Place chicken thighs in a zip-top bag or bowl, pour half of the marinade over them, seal tightly, and marinate in the fridge for at least 30 minutes.
  4. Arrange marinated chicken on the lined tray, brush with remaining marinade, and bake for 35-40 minutes until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  5. Let rest for 5 minutes before serving. Garnish with chopped green onions.
