  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream (full-fat)
  • 3 large fresh lemons (juiced and zested)
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)
  • 2 tbsp cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl; press into the bottom of a springform pan.
  2. Bake crust for about 10 minutes until golden brown. Cool while preparing the filling.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar until combined.
  4. Mix in lemon juice, zest, sour cream, and vanilla extract until smooth.
  5. Add eggs one at a time, mixing gently after each addition.
  6. Pour filling over cooled crust and bake for about 50 minutes until edges are set but center jiggles slightly.
  7. Cool completely before refrigerating for at least four hours or overnight.
