  • 1 lb beef sirloin, sliced into thin strips
  • 1 large red onion, cut into wedges
  • 2 medium ripe tomatoes, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp red wine vinegar
  • Optional: 1 cup French fries

Instructions

  1. Slice the beef against the grain into thin strips and chop onions and tomatoes into wedges.
  2. Heat a large skillet over medium-high heat and add oil until shimmering; sear beef for 3-4 minutes until browned.
  3. Add onions and tomatoes to the skillet; stir-fry for 2-3 minutes until onions are translucent.
  4. Pour in soy sauce and vinegar; simmer for an additional minute to blend flavors.
  5. Add chopped cilantro just before serving; mix well and serve hot over rice or with fries.
