  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup salsa (store-bought or homemade)
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 cup crushed tortilla chips
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, cook chicken for 6-8 minutes per side until golden brown and cooked through. Shred the cooked chicken in a bowl.
  3. Mix shredded chicken with garlic, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
  4. Layer half of the chicken mixture in the baking dish followed by half of the cheese. Repeat layers and top with remaining cheese.
  5. Bake for 25-30 minutes until cheese is bubbly and golden.
  6. Remove from oven and sprinkle crushed tortilla chips on top before serving.
