  • 1/2 cup chopped walnuts (or pecans)
  • 1/2 cup dried fruit (raisins or cranberries)
  • 2 large eggs
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened applesauce

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine eggs, oil, vanilla extract, and applesauce until smooth. Mix into dry ingredients.
