  • 1/4 cup pine nuts (lightly toasted)
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves
  • 1 cup heavy cream
  • 1/4 cup extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Toast the pine nuts in a dry skillet over medium heat for 3-5 minutes until golden.
  2. In a food processor, blend basil, toasted pine nuts, garlic, Parmesan, salt, and pepper until finely chopped.
  3. With the processor running on low, drizzle in olive oil until smooth.
  4. In a saucepan over medium heat, warm the heavy cream for about 3 minutes.
  5. Stir in the pesto mixture into the warm cream and let blend for another 2-3 minutes.
  6. Remove from heat and add lemon juice before serving.
