  • 1 lb ground beef (80/20)
  • 1 medium yellow onion, finely chopped
  • 1 cup bell peppers (mixed red and green), diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/2 cup green olives, sliced
  • 1/4 cup raisins
  • 2 tsp ground cumin
  • 2 bay leaves
  • Salt & pepper to taste

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and bell peppers; sauté until softened.
  2. Stir in minced garlic and add ground beef. Cook until browned with no pink remaining.
  3. Mix in tomato sauce, olives, raisins, cumin, salt, and pepper until well combined.
  4. Lower the heat to medium-low, add bay leaves, cover the skillet, and let simmer for 20-30 minutes.
  5. Taste and adjust seasoning if necessary before serving hot over rice or in tacos.
