  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 3 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1/4 cup unsalted butter (softened)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 15×10-inch jelly roll pan with parchment paper.
  2. In a bowl, mix flour, baking powder, cinnamon, and sugar. In another bowl, whisk eggs, then add pumpkin and vanilla.
  3. Combine wet and dry ingredients gently until just mixed; do not overmix.
  4. Pour batter into the prepared pan and bake for 13-15 minutes until a toothpick comes out clean.
  5. After baking, invert the cake onto a towel dusted with powdered sugar and roll it up tightly.
  6. For the filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth; spread over cooled cake before rolling it back up.
