  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 4 oz cream cheese (block)
  • 1/4 cup butter (softened)
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat pumpkin puree, granulated sugar, brown sugar, eggs, and vanilla until smooth.
  4. Gradually fold dry ingredients into wet ingredients until just combined.
  5. Drop mounds of batter onto prepared sheets about two inches apart. Bake for 12-15 minutes until springy.
  6. While cookies cool, beat cream cheese and butter until fluffy; gradually add powdered sugar until smooth.
  7. Spread or pipe filling onto half of the cookies and top with the other half.
