  • 1 tsp baking soda

  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil (or melted coconut oil)
  • 1 tsp pure vanilla extract
  • Cream cheese frosting (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix pumpkin puree with brown sugar and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gradually incorporate dry ingredients into wet ingredients until just combined.
  5. Scoop heaping tablespoons of batter onto prepared baking sheets about two inches apart.
  6. Bake for 12-15 minutes until edges are set but centers remain soft. Allow them to cool completely on wire racks before frosting.
  7. Spread cream cheese frosting on the flat side of one pie and top it with another to create a sandwich.
