  • 1/4 tsp saffron threads
  • 2 cups low-sodium chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp unsalted butter or olive oil
  • Salt and pepper to taste
  • Fresh parsley or cilantro (optional) for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear. Soak saffron threads in warm broth for about 10 minutes.
  2. In a large pot over medium heat, melt butter or heat olive oil. Add onions and garlic; sauté until translucent, about 3-4 minutes.
  3. Stir in the rinsed rice until coated with butter. Pour in the saffron-infused broth and season with salt and pepper.
  4. Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes until liquid is absorbed.
  5. Remove from heat, let sit covered for 5 minutes. Fluff with a fork and garnish with herbs if desired.
