Ingredients

  • 1 lb fresh salmon fillet
  • 1 cup quinoa or brown rice
  • 1 ripe avocado
  • 2 cups mixed veggies (bell peppers, cucumbers, carrots)
  • 2 tbsp low-sodium soy sauce or tamari
  • 1 tsp sesame oil
  • Juice of 1 lime

Instructions

  1. Rinse quinoa or brown rice under cold water. Combine with 2 cups of water in a saucepan and bring to a boil. Reduce heat and simmer until fluffy (about 15 minutes).
  2. Preheat the oven to 400°F (200°C). Season salmon with salt and pepper. Place on a lined baking sheet and bake for 12-15 minutes until flaky.
  3. In a skillet over medium heat, add olive oil and sauté chopped mixed veggies for 5-7 minutes until softened yet crisp.
  4. Assemble your bowl by layering quinoa/rice, flaked salmon, and sautéed veggies.
  5. Drizzle with soy sauce, sesame oil, and lime juice before serving.
