Salsa verde is a vibrant, zesty sauce that adds an explosion of flavor to any dish. Made primarily from fresh tomatillos, cilantro, and lime juice, this versatile condiment is perfect for tacos, grilled meats, or as a refreshing dip.   • 6 medium tomatillos (about 1 lb), husked and quartered
  • 1 cup fresh cilantro leaves
  • 12 jalapeño peppers, seeded and diced (adjust to taste)
  • Juice of 2 limes (about ¼ cup)
  • 2 garlic cloves, minced
  • ½ teaspoon salt (adjust to taste)
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Rinse tomatillos under cold water; remove husks and quarter them.
  2. Heat olive oil in a skillet over medium heat. Add tomatillos and jalapeños; sauté until softened and blistered (5-7 minutes).
  3. During the last minute of cooking, add minced garlic.
  4. Transfer mixture to a blender. Add cilantro, lime juice, and salt; blend until smooth but slightly chunky.
  5. Taste and adjust seasoning as needed.
  6. Chill in the fridge for at least 30 minutes before serving.
