  • 1 medium onion, diced
  • 1 bell pepper (red or yellow), chopped
  • 3 cloves garlic, minced
  • 4 farm-fresh eggs
  • 1 tsp ground cumin
  • 1 tsp paprika (smoked if desired)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onions and bell peppers until soft, about 5-7 minutes.
  2. Add minced garlic, cumin, and paprika; stir for another 1-2 minutes until fragrant.
  3. Incorporate the chopped tomatoes and season with salt and pepper. Simmer for approximately 10-12 minutes until the sauce thickens.
  4. Create small wells in the sauce and crack an egg into each well gently. Cover and cook on low heat for 6-8 minutes until egg whites are set but yolks remain runny.
