Shrimp tempura is a delightful dish that combines crispy, golden batter with succulent shrimp. Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup tempura batter mix
  • 1 cup ice-cold water
  • 2 cups vegetable oil (for frying)
  • 1 tsp salt (for seasoning)
  • For Tentsuyu Sauce: 1/4 cup soy sauce, 1/4 cup mirin, 1/4 cup dashi broth

Instructions

  1. Prepare all ingredients and have them within reach.
  2. In a bowl, mix the tempura batter mix with ice-cold water until just combined; lumps are fine.
  3. Heat vegetable oil in a deep pot to 350°F (175°C).
  4. Dip each shrimp by the tail into the batter, letting excess drip off before placing in the hot oil.
  5. Fry shrimp for 2-3 minutes until golden brown and crispy.
  6. Remove from oil using a slotted spoon and drain on paper towels.
  7. For the Tentsuyu sauce, mix soy sauce, mirin, and dashi in a small bowl.
