Ingredients

Scale
  • 4 chicken thighs (skin-on, bone-in)
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Marinate the chicken thighs in buttermilk mixed with salt and spices for at least 2 hours or overnight.
  2. Set up your dredging station: one bowl with seasoned flour, one with beaten eggs mixed with water, and another clean flour bowl for double dredging.
  3. Remove chicken from buttermilk, letting excess drip off. Coat in seasoned flour, dip in egg mixture, then coat again in flour.
  4. Heat vegetable oil in a skillet over medium-high heat until it reaches 350°F (175°C).
  5. Fry each piece for about 12-15 minutes per side until golden brown and cooked through. Drain on paper towels.
  6. Let rest for a few minutes before serving hot with your favorite sides.
