  • 4 oz fresh ramen noodles
  • 4 cups low-sodium chicken or vegetable broth
  • 1 tbsp grated fresh ginger
  • 3 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 2 green onions, finely chopped
  • 2 soft-boiled eggs
  • 1 cup bok choy or mushrooms, sautéed

Instructions

  1. In a large pot over medium heat, add a splash of oil and sauté minced garlic and grated ginger until fragrant (about 1 minute).
  2. Pour in the broth, soy sauce, and Sriracha. Bring to a gentle simmer.
  3. In another pot, boil water and cook ramen noodles according to package instructions until al dente. Drain and set aside.
  4. In the broth pot, add chopped bok choy or mushrooms and sauté for 3-5 minutes until tender but crisp.
  5. To serve, place cooked noodles in bowls, ladle hot broth over them, top with sautéed veggies, halved soft-boiled eggs, and sprinkle green onions.
