  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 3 cloves minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil
  • 1/4 cup pine nuts (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Pound each chicken breast to an even thickness.
  2. In a bowl, mix cream cheese, garlic, spinach, mozzarella, salt, and pepper until combined. Add pine nuts if desired.
  3. Spoon the filling onto one side of each chicken breast and fold over. Secure with toothpicks or kitchen twine.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear each stuffed chicken breast for about 4-5 minutes per side until golden brown.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  6. Remove toothpicks before serving warm with your favorite sides.
