  • 12 large pasta shells
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach leaves (chopped)
  • 2 cups marinara sauce
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Cook the pasta shells in salted boiling water until al dente; drain and cool slightly.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant. Add spinach and cook until wilted.
  3. In a bowl, combine ricotta, half the mozzarella, sautéed spinach, Parmesan, Italian seasoning, salt, and pepper.
  4. Stuff each pasta shell with about one tablespoon of the filling and place them in a greased baking dish.
  5. Cover the stuffed shells with marinara sauce and sprinkle the remaining mozzarella on top.
  6. Bake at 375°F (190°C) for 25 minutes covered with foil, then remove foil and bake an additional 10 minutes until bubbly.
