  • 2 cups fresh or frozen sweet corn
  • 1 can (15 oz) creamed corn
  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 cup sour cream (full-fat preferred)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup melted butter
  • 2 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together sweet corn, creamed corn, Jiffy mix, sour cream, melted butter, cheddar cheese, eggs, salt, and pepper until just combined.
  3. Grease a 9×13 inch baking dish with nonstick spray or butter. Pour the mixture into the prepared dish and smooth it out.
  4. Bake in the preheated oven for 45-55 minutes until the top is golden brown and set in the center.
  5. Allow to cool for 10-15 minutes before serving.
