  • 8 corn or flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fresh salsa
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, add olive oil and sauté diced onions and minced garlic until translucent.
  3. Add ground beef; cook until browned (about 5-7 minutes). Drain excess fat.
  4. Stir in cumin, chili powder, black beans, and salsa; simmer for about 5 minutes.
  5. Layer half of the tortillas at the bottom of the baking dish; spoon half of the beef mixture on top followed by half of the cheese.
  6. Repeat layering with remaining tortillas, beef mixture, and finish with cheese on top.
  7. Bake for 25-30 minutes until bubbly and golden brown.
