  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 1 cup cornmeal
  • 1 cup milk
  • 2 large eggs
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking dish.
  2. In a skillet over medium heat, brown the ground meat (5-7 minutes). Add taco seasoning, black beans, corn, and diced tomatoes; heat through.
  3. In a bowl, mix cornmeal, milk, eggs, and olive oil until smooth.
  4. Spread the meat mixture in the baking dish and pour cornbread batter on top.
  5. Bake for 25-30 minutes until golden brown.
  6. Sprinkle cheese on top during the last 5 minutes of baking.
