  • 1 can (14.5 oz) fire-roasted tomatoes
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tsp cumin powder
  • 1 tsp oregano (dried)
  • 1 cup low-sodium chicken broth
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by resting it at room temperature for about 15 minutes.
  2. In a large skillet over medium heat, sauté onions in olive oil until translucent (4-5 minutes), then add minced garlic and cook until fragrant.
