  • 9 no-boil lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce
  • 2 cups fresh spinach
  • 1 medium zucchini, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, diced (mixed colors)
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Sauté sliced zucchini, mushrooms, and bell peppers in olive oil until tender.
  3. In a bowl, mix ricotta cheese with Italian seasoning and salt.
  4. Spread marinara sauce in the baking dish, layer with noodles, half of the ricotta mixture, sautéed veggies, and mozzarella cheese. Repeat layers until all ingredients are used.
  5. Top with a final layer of noodles, marinara sauce, and mozzarella cheese. Cover with aluminum foil.
  6. Bake for 25 minutes covered and then remove foil to bake for an additional 15 minutes until golden brown.
  7. Let cool for 10 minutes before slicing.
