  • 3 medium zucchinis (about 1.5 lbs)
  • 1 cup ricotta cheese
  • 2 large eggs
  • 2 cups marinara sauce (no added sugars)
  • 2 cups shredded mozzarella cheese (fresh preferred)
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis into thin strips (1/4 inch thick) and lay them on paper towels; sprinkle with salt to draw out moisture.
  3. In a bowl, combine ricotta cheese, eggs, half of the Parmesan, Italian seasoning, salt, and pepper; mix until smooth.
  4. In a baking dish, spread a layer of marinara sauce, followed by zucchini slices, half the ricotta mixture, and some mozzarella.
  5. Repeat layering until reaching the top; finish with marinara sauce, remaining mozzarella, and Parmesan.
  6. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15-20 minutes until bubbly and golden brown. Let cool slightly before serving.
