  • 4 medium Russet potatoes (approximately 8 oz each)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 4 tbsp butter (or sour cream/Greek yogurt)
  • Assorted toppings (cheese, chives, bacon bits, etc.)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Scrub the Russet potatoes under running water and pat dry.
  3. Poke several holes in each potato with a fork.
  4. Drizzle olive oil over the potatoes and sprinkle with salt, rubbing it into the skin.
  5. Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender when squeezed gently.
  6. Carefully slice open each potato, add butter or your favorite toppings, and enjoy!
