4 medium potatoes (about 1.5 lbs), peeled and cubed
1 large yellow onion, chopped
4 garlic cloves, minced
1 bell pepper (any color), diced
½ cup fresh cilantro, chopped (for garnish)
4 cups low-sodium beef broth
2 tsp ground cumin
2 tsp paprika
2 tbsp olive oil
Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium-high heat. Add diced beef and sear until browned on all sides (5-7 minutes).
Add chopped onions and minced garlic; sauté until softened (3-4 minutes).
