Ground beef quesadillas are the perfect quick meal that brings together savory ground beef, melted cheese, and crispy tortillas.   • 1 lb lean ground beef
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 medium onion, diced
  • 1 cup bell peppers, diced (red or green)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp vegetable oil (for frying)
  • Sour cream and salsa for serving

Instructions

  1. Heat a skillet over medium heat and add 1 tbsp of oil. Sauté diced onions and bell peppers until soft.
  2. Add ground beef and cook until browned, about 5-7 minutes. Season with cumin, chili powder, salt, and pepper.
  3. On one half of each tortilla, layer the beef mixture and cheese. Fold over to form quesadillas.
  4. In the same skillet, add remaining oil and cook each quesadilla for about 3-4 minutes per side until golden brown.
  5. Slice into wedges and serve warm with sour cream or salsa.
