  • 1 cup long-grain white rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 large egg
  • 1 cup plain breadcrumbs
  • 28 oz can crushed tomatoes
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a bowl, mix ground beef, onion, garlic, egg, breadcrumbs, salt, pepper, and herbs until just combined.
  2. Roll the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides.
  4. Remove the meatballs and add crushed tomatoes to the skillet along with dried herbs; let simmer for about 10 minutes.
  5. Return the meatballs to the sauce and cook on low for an additional 20 minutes.
  6. Cook rice according to package instructions while the meatballs finish cooking.
