  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 3 cups cooked rice (preferably day-old)
  • 1 cup teriyaki sauce (store-bought or homemade)
  • 2 cups mixed vegetables (e.g., broccoli, bell peppers, carrots)
  • 2 tbsp sesame seeds (for garnish)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tsp ginger powder

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Cut chicken into bite-sized pieces and mix with minced garlic and half of the teriyaki sauce in a bowl until well-coated.
  3. In another bowl, combine cooked rice and mixed vegetables. Add the remaining teriyaki sauce and mix thoroughly.
  4. Layer the chicken mixture over the rice-veggie blend in the prepared dish. Stir gently if desired.
  5. Cover with aluminum foil and bake for 25 minutes.
  6. Remove foil, sprinkle sesame seeds on top, and bake uncovered for an additional 10 minutes until golden.
