  • 1 cup bell peppers (red and green), diced

  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot, add penne, and cook until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned (about 5 minutes). Stir in bell peppers and onions; cook until softened.
  3. Mix in minced garlic; sauté for about 1 minute. Sprinkle Cajun seasoning over the mixture.
  4. Pour in heavy cream while stirring. Simmer gently for 3-4 minutes until slightly thickened.
  5. Add cooked pasta and grated Parmesan to the skillet, mixing well. Adjust consistency with reserved pasta water if needed.
  6. Plate immediately, garnishing with extra Parmesan or parsley if desired.
