  • 6 large eggs
  • 4 strips bacon or 4 oz. sausage
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 1 cup diced bell peppers (any color)
  • ½ cup diced onions

Instructions

  1. Prepare your ingredients: Dice the onions and bell peppers.
  2. Cook the bacon or sausage in a skillet over medium heat until crispy. Remove and let drain on paper towels.
  3. Sauté the diced onions and bell peppers in the same skillet for about 3-4 minutes until soft.
  4. Whisk eggs with salt and pepper; pour into the skillet and scramble until just set (about 3-4 minutes).
  5. Assemble burritos by placing egg mixture, bacon/sausage, and cheese down the center of each tortilla.
  6. Wrap tightly and enjoy fresh or store for later.
