  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 yellow onion, diced
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup water
  • 2 cups frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup plain or seasoned breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper; place in the bottom of the baking dish.
  3. In a skillet over medium heat, sauté onions and garlic until translucent. Mix in cream of chicken soup and water until combined.
  4. Add frozen mixed vegetables to the skillet and stir well, then pour the mixture over the chicken.
  5. Top with shredded cheeses followed by an even layer of breadcrumbs.
  6. Cover with aluminum foil and bake for 30 minutes; remove foil and bake for an additional 20 minutes until golden brown.
  7. Allow to cool slightly before serving.
