Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 green onions, chopped
  • 4 garlic cloves
  • 1 habanero pepper (adjust for heat preference)
  • 1 tsp pimento (allspice)
  • 2 tbsp brown sugar
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp low-sodium soy sauce
  • ½ tsp ground cinnamon
  • Salt to taste

Instructions

  1. Create Your Marinade: In a blender, combine green onions, garlic, habanero pepper, pimento, brown sugar, lime juice, soy sauce, cinnamon, and salt. Blend until smooth.
  2. Marinate the Chicken: Place chicken breasts in a large bowl or zip-top bag. Pour marinade over chicken and coat evenly. Refrigerate for at least 2 hours, preferably overnight.
  3. Preheat Your Grill or Oven: For grilling, preheat to medium-high heat (375°F). For baking, preheat oven to 400°F (200°C) and line a baking sheet with foil.
  4. Cook the Chicken: Grill or bake marinated chicken for about 25-30 minutes until cooked through and slightly charred. Flip halfway for even cooking.
  5. Rest and Serve: Remove from heat and rest for 5-10 minutes before slicing. Serve with rice & peas or a fresh salad.
