  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add the egg and vanilla extract; mix until well combined.
  3. In another bowl, whisk together flour, rolled oats, baking powder, and a pinch of salt. Gradually combine the dry ingredients with the wet mixture until just mixed.
  4. Drop rounded tablespoons of dough onto lined baking sheets, spacing them two inches apart. Bake for 10-12 minutes until golden brown at the edges but still soft in the center.
  5. While cooling on wire racks, whip marshmallow fluff with powdered sugar until smooth. Once the cookies are completely cool, spread filling on half and sandwich them with another cookie.
