  • 1 cup long-grain rice (jasmine or basmati)
  • 1 medium onion (finely chopped)
  • 1 green bell pepper (chopped)
  • 3 garlic cloves (minced)
  • 2 celery stalks (chopped)
  • 1 can (14.5 oz) diced tomatoes (no-salt-added)
  • 4 cups low-sodium vegetable broth
  • 2 tsp Cajun seasoning
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Soak the red beans overnight in water. Drain and rinse before use.
  2. Prepare the vegetables by washing and chopping them into bite-sized pieces.
  3. In your crockpot, combine soaked red beans, long-grain rice, chopped onion, green bell pepper, minced garlic, diced tomatoes, celery stalks, Cajun seasoning, bay leaves, salt, pepper, and vegetable broth.
  4. Cover and set the crockpot on low heat for 6-8 hours or until the beans are tender.
  5. About 30 minutes before serving, check the consistency; add more broth if necessary.
  6. Before serving, remove bay leaves and gently stir to combine.
