  • 1 lb large shrimp (peeled and deveined)
  • 1 cup all-purpose flour
  • 2 tsp Cajun seasoning
  • 2 large eggs (beaten)
  • 1 cup panko breadcrumbs
  • 4 French bread rolls
  • 1 cup shredded lettuce
  • 1 large ripe tomato (sliced)
  • ½ cup remoulade sauce

Instructions

  1. Rinse shrimp under cold water and pat dry.
  2. In one bowl, combine flour and Cajun seasoning. In another bowl, whisk eggs until frothy. Place panko breadcrumbs in a third shallow dish.
  3. Dredge each shrimp in seasoned flour, dip into eggs, then coat with panko breadcrumbs.
  4. Heat oil in a deep skillet over medium-high heat. Fry shrimp in batches for about 3-4 minutes until golden brown.
  5. Slice French bread rolls down the middle, layer with lettuce and tomato, then stack fried shrimp high.
  6. Drizzle with remoulade sauce before closing the rolls.
