  • 1 cup bell peppers (diced)
  • 1 cup zucchini (diced)
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ¼ cup Parmesan cheese (grated)
  • Salt and pepper to taste

Instructions

  1. Prepare your pasta by boiling water in a large pot. Add a pinch of salt and cook pasta until al dente (about 8-10 minutes). Drain, reserving some pasta water.
  2. In a skillet over medium heat, warm olive oil until shimmering. Add diced bell peppers and zucchini; sauté for 3-4 minutes until slightly tender.
  3. Stir in minced garlic and cook for about 30 seconds until fragrant.
  4. Add halved cherry tomatoes; cook for an additional 5 minutes until they release their juices.
  5. Combine the cooked pasta with the vegetable mixture in the skillet. Toss together, adding reserved pasta water if needed.
  6. Sprinkle Italian seasoning and Parmesan cheese over the top; mix well and adjust seasoning to taste.
