  • 2 cups low-sodium vegetable broth
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt & pepper to taste

Instructions

  1. Cook the Farro: In a medium saucepan, bring vegetable broth to boil over medium heat. Add farro, reduce heat to low, cover, and simmer for 25-30 minutes until tender yet chewy.
  2. Sauté the Vegetables: While the farro cooks, heat olive oil in a skillet over medium heat. Add cherry tomatoes and cook until they soften and burst (about 5 minutes).
  3. Add Spinach: Toss in spinach leaves and stir until wilted (2-3 minutes).
  4. Combine Ingredients: Fluff the cooked farro with a fork and add it to the skillet mixture. Stir gently to combine.
  5. Add Feta & Seasoning: Crumble feta over the top along with lemon juice, salt, and pepper. Stir to incorporate.
