  • 8 oz penne pasta
  • 3 cups fresh spinach
  • 1 cup cherry tomatoes (halved)
  • 3 cloves garlic (minced)
  • 1 medium yellow onion (chopped)
  • 2 tbsp extra virgin olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic; sauté until translucent.

  5. Add the drained pasta to the skillet along with reserved pasta water, Parmesan cheese, and red pepper flakes. Toss to combine until creamy.
