  • 1 lb lean ground beef
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onions
  • 1/2 cup diced bell peppers (any color)
  • 2 tbsp taco seasoning
  • 1/2 cup sour cream (for serving)
  • 1/2 cup salsa (for serving)

Instructions

  1. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
  2. Add chopped onions and bell peppers to the beef; sauté until softened.
  3. Sprinkle taco seasoning over the mixture and cook for another 3-5 minutes until fragrant.
  4. Stir in half of the cheese until melted, creating a gooey filling.
  5. Spread the beef-cheese mixture onto one half of each tortilla and fold them over.
  6. Heat a skillet over medium-high heat and grill each folded tortilla until golden brown on both sides, about 3-4 minutes per side.
  7. Slice into wedges and serve hot with sour cream and salsa.
